Berry Millet Minis

Ingredients
- 0.75 cup millet, cooked
- 0.75 cup raspberries, frozen unsweetened
- 0.75 cup blueberries, frozen unsweetened
- 2 whole eggs
- 1 tsp oil (rapeseed or coconut oil)
- 1 cup brown millet flour
- 0.5 cup potato flour
Instructions
- Prepare the berries: Thaw the berries at room temperature. Drain the excess defrost water.
- Create the berry-egg mixture: Put the defrosted berries, eggs, and oil in a mixing bowl. Blend everything with a blender to a uniform mass.
- Add the millet: Stir the cooked millet into the berry-egg mixture. Tip: If you prefer a finer consistency or the motifs of your baking mat are very small, you can also puree the millet in advance.
- Add the flour: Gradually add the flour until the dough reaches a moldable consistency.
- Fill the dough into the baking mat: Distribute the dough evenly in the baking mat. Make sure all depressions are well filled.
- Bake the minis at 320°F (160°C) convection for about 20-25 minutes. The exact baking time can vary depending on the oven and size of the baking mat.
- Dry: After baking, carefully remove the cookies from the baking mat. Then dry them at 120-210°F (50-100°C) in the oven. To let excess moisture escape, clamp a wooden spoon in the oven door.
